Baked Ratatouille

Ingredients
  

  • 2 Medium eggplants Cut in cubes
  • 1 Large onion Chopped
  • 3 Zuccini Cut in cubes
  • 3 Garlic cloves Chopped small
  • 3 Totatoes Cut in cubes
  • 1 Small red pepper Cut in cubes
  • 1 Tbsp Dried parsley
  • 1 tsp Dried oregano
  • 1 tsp Pink Himalayan salt
  • 1/3 cup olive oil Extra virgin

Instructions
 

  • * Put all the ingredients in a deep casserole dish.
    * Mix with the oil and herbs.
    * Bake at 325 degrees (160C) for 1 1/2 hours every half an hour stir the vegetables.
    Notes: You can use other herbs according to your taste.
